Thai Chicken Satay with Spicy Peanut Sauce



Chicken MarinadeBamboo skewers

1 pound chicken

1/2 cup coconut milk

2 tablespoons curry powder

1 teaspoon salt

1 teaspoon sugar

Peanut Sauce3/4 cup coconut milk

1 tablespoon red curry paste

2 tablespoons fish sauce

3 tablespoons peanut butter

3 tablespoons sugar

1 tablespoon tamarind paste

Chicken Marinade

Step 1

In medium bowl mix ingredients together, cut chicken into strips, add chicken to bowl, mix to coat well and let marinate


Marinate for a few hours.

Step 2

Soak the bamboo skewers for just as long. Thread chicken onto skewers and cook unitl tender.

Peanut Sauce

Step 1

Add well stirred coconut milk in a cold pan, turn to medium low heat, as the milk warms add the curry paste, mixing to break up

Step 2

When you see the red oil simmering, add the rest of the ingredients.


If too thick you can always add a bit of water.


You should taste all the ingredients, a mix of spicy, sweet and sour.
