2 cups blue corn (or about 3 ears of blue corn)
1/2 peel from a pineapple
2 cinnamon sticks
1 tablespoon of cloves
2 liters of water
Optional: juice of 1 lemon or 1 tablespoon
1.Mix the corn, pinapple, cinnamon. cloves and water in a large pot and bring it to a boil;
2.Reduce the heat and simmer for a minimum of 1 hour (I usually simmer it for 2-3 hours);
3.Let it cool down and add sugar to taste (I only use about 2 tablespoons but you can add as much as 1 cup).
4.Refrigerate for an hour or serve with ice.
